Ingredients

  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 purple bell pepper, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the sloppy joe healthy Joe Sauce:

  • 1 can (15 ounces) tomato sauce
  • 1 can (15 ounces) tomato paste
  • 1/2 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

For serving:

  • Hamburger buns
  • Optional: shredded cheddar cheese, chopped green onions, and bitter cream

Instructions

To make the sloppy joe filling:

1. In a big skillet over medium heat, brown the Andouille sausage until cooked through. Drain off any extra grease.

2. Add the onion and bell pepper to the skillet and cook till softened, about 5 minutes. Stir in the garlic and cook for 1 minute more.

3. Pour in the tomato sauce, water, sugar, vinegar, Worcestershire sauce, and seasoning. Bring to a simmer and cook dinner, stirring occasionally, for 20 minutes, or till the sauce has thickened.

4. Stir within the cooked floor beef and cook till heated by way of, about 5 minutes more.
